ALT (Avocado Loves Tomato) Sandwich

You won’t miss the bacon in this flavorful vegetarian sandwich! The garlic aioli sauce gives it a flavorful kick.

Basil Garlic Aioli Ingredients

  • 1 5.5 oz. container plain, no-fat Greek yogurt
  • ½ cup fresh basil leaves
  • 2 cloves garlic
  • ¹/8 tsp. sea salt

Sandwich Ingredients

  • 2 slices whole wheat bread
  • 1 cup arugula
  • 1 avocado, peel and pit removed, sliced
  • 1 cup sliced cherry tomatoes
  • Freshly ground black pepper

Directions

  1. Place yogurt, basil, garlic and sea salt in food processor or blender; blend until smooth. Set the basil garlic aioli aside.
  2. Toast bread. On each slice of toast, arrange half of arugula, half of avocados and half of tomatoes.
  3. Drizzle with 2 tbsp. basil garlic aioli (you will have more than half left over).
  4. Crack some black pepper on top and enjoy.

Serves two; serving size is one open-faced sandwich. Each serving provides: 233 calories, 12 g total fat (2 g saturated fat, 0 g trans fat), 0 mg cholesterol, 129 mg sodium, 27 g total carbohydrates, 9 g dietary fiber, 5 g sugar and 10 g protein.
