KEYLIME CHEESECAKE

Ingredients:

  • 3.5 ounces fat-free cottage cheese
  • 2 Tbsp vanilla flavored protein powder
  • 1 tsp lime juice
  • 1 egg white
  • Splenda or other sugar substitute to taste

Directions:

  1. Preheat oven to 300 degrees.
  2. Mix cottage cheese and protein powder in blender until it’s a smooth consistency, add lime juice.
  3. Taste for sweetness, add a bit more sweetener if desired.
  4. Add egg white and stir thoroughly.
  5. Pour into a small baking form.
  6. Place a small pan with 1 inch of water in oven.
  7. Set cheesecake pan in this water bath.
  8. Bake for 20 minutes and cool for the same length of time.
