MASHED SWEET POTATOES

Ingredients:

  • 4 small sweet potatoes
  • 1/4 teaspoon salt
  • 3/4 teaspoon dried thyme
  • 1/4 teaspoon pepper

Directions:

  1. Scrub and peel potatoes and cut into 3/4 inch slices.
  2. Steam over boiling water for 25 minutes or until soft.
  3. Place them into a bowl and mash with a fork or potato masher.
  4. Stir in seasonings and serve.

Makes 4 servings.

Gastric Bypass: 6 weeks+
Lap-Band: 6 weeks+
