CHICKEN ROLLS

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 2 roasted red bell peppers
  • 1 large onion
  • Add any other vegetables of your choice
  • 8 ounce bag shredded mozzarella cheese
  • 1 large jar spaghetti sauce
  • Salt and pepper to taste

Directions:

  1. Flatten chicken breast and sprinkle with salt and pepper.
  2. Fill with veggies and 1/2 of the cheese.
  3. Roll and place in a greased baking dish.
  4. Cover with sauce.
  5. Bake at 375 degrees for 45 minutes.
  6. Cover with remaining cheese and bake uncovered until cheese is golden and bubbly.
