Pumpkin Muffins


Enjoy these delicious pumpkin muffins warm from the oven during the holidays. They will fill your house with the sweet smell of  cinnamon, nutmeg, and cloves that will delight the senses.

2 ¼ cup flour
2 tsp pumpkin pie spice
1 ½ tsp baking soda
1 tsp ground ginger
1/4 tsp salt
1 cup golden raisins (optional)
1/2 cup walnuts, chopped (optional)
1 cup brown sugar
1 3/4 cup pumpkin, canned
1/3  cup buttermilk
1/3 cup canola oil
1/4 cup molasses
1 tsp vanilla
2 eggs

- Mix dry ingredients together: flour, pumpkin pie spice, baking soda, ginger, and salt.
- Add raisins and walnuts if desired. Set aside.
- Mix brown sugar, pumpkin, buttermilk, oil, molasses, vanilla, and eggs.
- Beat with wire whip.
- Add to dry ingredients.

Spray muffin tins well. Fill each tin to 3/4 full.
Bake at 400 degrees for 15 minutes.
