Ingredients: (Makes 12 muffins) • 2 cups flour • ¾ cup sugar • 1 ½ tsp. baking powder • ¾ tsp. salt • ½ tsp. baking soda • ¼ cup oil • ¾ cup orange juice • 1 egg • 1 cup fresh or frozen blueberries • 1 tbsp. orange zest Directions: Mix dry ingredients. In a separate bowl, mix all wet ingredients. Fold liquid ingredients into dry ingredients. Add blueberries and orange zest. Mix until blended. Fill lightly greased muffin pans 2/3 full. Bake at 375 degrees for 25 to 30 minutes, until tops are golden brown.
