Honey-Herb Chicken

These tasty chicken breasts, either grilled or broiled, are heart-healthy and easy to prepare. They can be served right away or refrigerated to use in sandwiches or salads later for a quick dinner or lunch on the go.

Ingredients:

- 4 boneless, skinless chicken breast halves (about 1 pound)                           
- 2 Tbsp. of lime juice
- 1 to 2 Tbsp. fresh coriander, chopped             
- 1 Tbsp. honey

Directions: 
With a mallet pound each breast half to about 1/2-inch thick. Combine lime juice, coriander, and honey in a small bowl. Brush chicken breasts with glaze. Brush grill lightly with olive oil. Grill (or broil) chicken approximately five minutes on each side.

Serves four.
